SOME IMPORTANT TIPS FOR THE RECIPE :

Boil the milk properly and turn of the stove and then , add acidic ingredient . If milk doesn’t curdle then boil for some more time till the milk curdles .

* Use cold water or ice cubes to stop further and now , this results in soft chena .

* check whether your chana must not be so hard .

INGREDIENTS :

* For making rasmalai:

1 1/4 liters of milk

1 to tbsp of lemon juice

1 litre of ice water

*For making sugar syrup:

1 cup of sugar

3 1/2 cups of water

1/4 tspn of cardamom powder

* To make rabri:

3/4 milk

1/2 cup of sugar

pinch of saffron

2 tbspn pista

PREPARATION :

The preparation of rasmalai can be easily done in three stages :

1. Making of rasmalai

2.Making of chenna

3. Sugar Syrup preparation

*** Thickened milk for rasmalai :

1.Pour 3 cups of milk and till the end and boil .

2. Add saffron and sugar after the milk is boiled properly .

3.Reduce the flame to medium and stirr properly for every few
minutes and avoid the milk extremely burning at the bottom .

4.cream layer forms then move them a side .

5.Boil till the milk gets thicker form and reduces in its quantitiy .Let it
set cool a side for few minutes.

6.Half quantity should be warmth and other half should be cooled and kept in fridge .

** Making of Chenna :

1. Boil the milk in a pot .Till the milk boil properly and off the stove .

2.Let the milk curdle .If milk Doesnt curdle boil for some more time till curdles occur in the milk .Add few ice cubes and keep it a side for
few minutes .

3. Pour fresh water over the Chena and rinse it well . You can also
wash it under Runnning water for the sour taste to vanish . Then ,
squeeze the water and make it as a knot .

4.Wait for next 45 minutes and excess water will drain off .

5.Chena should not be sticky ,rough and dry .It must be smooth and moist for the better results .

**Kneading chena :

1.Transfer the chenna into a plate , knead 3 to 5 minutes in order to makeit smooth .

2.Make sure that the chenna must not contain any grainy particles and it must be smooth as well as non -sticky texture .

3.Make 12 equal balls and flatten them without any breakage and
roughness.

4.Make them gently and smoothly without any cracks on the disc if occured cover and role some part on the sides .

***SUGAR SYRUP:

1. Add 3 1/2 cups of water to a boil with 1 cup of sugar .

2. Stirr sugar dissolves completely and then add cdomom powder as well .

3. When the sugar syrup is being boiled slowly add the discs .

4. Allow them to boil in the syrup for 9 to 10 minutes at a high flame .

5.Turn off the stove and free move the pot for the further procedure .

6. Keep the lid closed and avoid their breakage , or shrinking too much.

7. After that slowly they will sink into the syrup.

***Assembling rasmalai :

1. Take off the discs to a plate and cool them .

2 .Squeeze them gently and remove the excess sugar syrup .

3.Add this to the warmth thickened milk or rabri

4. Rest them about 3 to 4 hours and merge it with the Coolened Rabri just before serving .

5. Garnish the special recipe with the chopped nuts .
